Pecan Spice Delight Cookies

If you’re looking for a heart-healthy, can’t eat just one, easy, and super yummy cookie that will take you only minutes to make, then look no more. This is a terrific dessert recipe to take as a dish to pass around parties and family gatherings. And it’s one of those great raw food recipes that you can make in advance and store in your freezer. I know the holidays seem a long ways off, but get a head start! Oh, and one more thing…everyone who makes these (and eats these) LOVES them.

Pecan Spice Delight Cookies

Yield: 2-dozen cookies

1 1/2 cups raw pecans
1/2 cup unsweetened, shredded, and dried coconut flakes
1 tablespoon (or more!) lucuma powder*
pinch Himalayan crystal salt
1/2 teaspoon ginger powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/2 cup raisins
10 soft dates, pitted

Process all of the ingredients, except for the raisins and dates, in a food processor, fitted with the “S” blade, until coarsely ground. Add the raisins and dates and continue processing until the mixture begins to stick together when pressed between your fingers. Using about 2 tablespoons worth of dough per cookie, roll and form them into desired shapes.

*If you don’t have lucuma on hand, these are still amazing without it.
