Five Flavorful Veggie Sandwiches

Whether eaten for an on-the-go lunch or dinner, sandwiches can be a delicious and filling meal option. Add veggies, and they also pack a healthy punch. The possibilities for yummy vegetarian sandwich options are endless, but here are a few options.

1.) Grilled Portobello, Bell Pepper and Goat Cheese Sandwiches. Forget the burger meat, the grilled mushroom is the star of this sandwich. Portobello mushroom caps and bell peppers are tossed in balsamic vinegar, olive oil and minced garlic before being grilled and paired with goat cheese. Cooking Light has the recipe.

2.) Chickpea Burger. Chickpeas are processed into a paste and mixed with minced garlic, grated carrot, spices, and egg and flour to form the patty of this “burger.” Top with tomato and red onion as suggested in the recipe which can be found here.

3.) Grilled Eggplant Burger. Cut the carbs but not the taste. Grilled and seasoned eggplant slices serve as the bread. Sandwiched in between the veggie slices are red peppers, mushrooms, and mozzarella cheese. Check out the recipe.

4.) California Grilled Veggie Sandwich. A sensational summer sandwich that can also be made on an indoor grill in the winter if you can locate the veggies. A lemon mayo provides a tangy twist in the sandwich filled with bell peppers, zucchini, red onion and crumbled feta cheese and served on focaccia bread. Find the recipe at Allrecipes.com.

5.) Chickpea, Beet and Apple Panini. Veggies and fruit team up to make a different kind of sandwich with a unique flavor. Broccoli or radish sprouts and black olive tapenade complete the sandwich which features Granny Smith apples sliced thinly. The recipe is at Vegetarian Times.
