Kiwi Black Bean Guacamole

All too often, people say that they don’t have time for healthy food. Hogwash! I’m here to prove that wrong with my great (and easy!) guacamole recipe that is perfect for your next snack or lunch (heck, I even love it for breakfast). It’s fantastic in the way that the kiwi (loaded with vitamin C) gives it a lightness that offsets the hearty black beans and rich avocado. Mmmmmmmm yum! It will keep you filled with fiber, healthy fats, vitamins, iron, and tons of antioxidants to help you live a long and healthy life.

Kiwi Black Bean Guacamole

  • Yield 1 serving

Oh yeah, the recipe serves one, but you’ll probably want to make a double (or triple) batch because your friends and family will be salivating next to you.

Ingredients

  • 1/2 cup unsalted cooked black beans (rinsed well, if from a can)
  • 1 avocado, pitted, peeled and diced
  • 1/2 cucumber, diced
  • 2 kiwi fruits, peeled and diced
  • 1 to 2 pinches Himalayan crystal salt
  • Pinch black pepper

Instructions

Toss (and slightly mash) the ingredients together and enjoy!
